About Brewing Temperature: Puerh
For the Puerh we selected, we are confident for you to taste the full spectrum of its performance at 100 C/ 212 F.
1. Every single one of the Puerh teas we have selected has passed our ruthless evaluation to showcase top performance amongst its peers. What that means: all our Puerh can be brewed with the boiling water of 100 °C/ 212 °F
2. Why do we recommend this temperature?
We look at each tea’s holistic performance, based on:
- Highlights and peak performance (flavor, aroma, body, structure, longevity) ;
- Weaknesses and undesirable traits (negative flavors, thin structure, short- lived, irritating to nose & throat reaction etc.)
100C / 212 F is a temperature that reveals characteristics of the tea completely during the course of the whole session, and shows its whole range of expression from bottom to peak. That informs our decision on selecting the best teas among peers.
3. The practice of applying lower temps may work well to mute undesirable traits in a tea, but also mutes the peak performance of a tea. One has to take in the nuance in all this, and make your own judgement as you come to understand each tea’s quality.
